{ Eat } Modified Spanish Rice

Hello readers and happy Hump Day! We're halfway through the week with a beautiful weekend waiting for us! We had a successful brunch on Sunday with nothing burned and everything coming out tasty.

I don't think it's a secret that I love food, especially the process of finding a recipe, cooking it and eating the results. There's even a dedicated category on my header! At times finding a recipe can be tedious, but I've found that with practice I've become more fearless and creative when following a recipe.

Take this Spanish Rice recipe from Simply Recipes. I had all of the ingredients on hand, but wanted a one-pot wonder without cooking separate dishes. I altered the recipe a bit by adding chicken and a full can of diced tomatoes with chipotle peppers. The result is an appetizing alternative to a simple recipe. Topped with diced avocado and I'm in food heaven!

Spanish Rice Recipe { adapted from Simply Recipes }

INGREDIENTS { with my additions }

2 Tbsp Olive Oil
1 Onion, chopped fine
2 Garlic Cloves, minced
2 cups of Jasmine rice
3 cups Chicken Stock
1 or 2 large Chicken Breasts, cut to bite size
1 14.5oz can Diced Tomatoes with Chipotle Peppers
Pinch of Oregano
Salt, to taste

METHOD

1. In large skillet or pot, brown rice in olive oil over medium/high heat. Stir often so as not to burn the rice.

At the same time brown chicken in olive oil in a separate pot in which you will ultimately cook the rice. This can be tricky to do at the same time, so if needed, brown the chicken first, then start on the rice

2. Add onion and garlic to rice and cook until softened, stirring frequently. About 4 minutes

3. Add chicken stock to cooked chicken and bring to a simmer. Add diced tomatoes, oregano and salt.

4. Add rice mixture to the broth, bring to a simmer. Cover and lower the heat to maintain a simmer (about low-medium/low). Cook for 25 minutes or according to rice instructions on package.

5. Turn off heat and let sit for 5 minutes. Uncover and behold the wonder of your dish.
